There are 300 different symptoms that result from Celiac disease, a medical condition when the small intestine is hypersensitive to gluten.

Friesen who started The Baking Beauties, a gluten free recipes website, shared about her experience with Celiac.

"I had different symptoms and it kind of got worse as I got older.  It started with the anaemia and not being able to figure out what caused it.  15 years later all of a sudden it was 'hey let's try a blood test' and there it was, it was that simple. Before that I guess doctors didn't know how to test for it and now it was something that was being brought forward in the medical community more. It think that is why more people are being diagnosed with it.  It is not necessarily that it has become more prevalent."

The main symptoms Friesen experienced were anaemia, digestive issues and very sore joints. She said Celiac can be harmful to your body; adding if untreated it can lead to sicknesses like Cancer.

Meanwhile, Friesen talked about starting up The Baking Beauties blog.

"A friend and I started a food blog prior to me being diagnosed.  Within three months I was diagnosed, she decided to go do other things and I switched everything over to gluten free.  Seven years now I have been blogging gluten free recipes."

She added she misses the convenience of shopping normally the most;  even though gluten free products are becoming more available all the time.
