Bite-sized pizza is perfect for little fingers (or big ones!), especially when the
filling is enclosed within the crust. A great after-school snack,
movie-night treat, or party hors d'oeuvre. Makes 24 bites.
Ingredients
- 1 can refrigerated breadsticks (such as Pillsbury) or 1 batch pizza dough
- 1 pepperoni stick (about 2 oz) (bison or turkey if you can find it), cut into 24 pieces
- three ¼-inch slices (about 3 oz) part-skim mozzarella cheese, cut into cubes
- ¼ tsp dried Italian seasoning or oregano
- 1 tbsp grated Parmesan cheese
- 1 cup spaghetti or pizza sauce, for dipping
Directions
1. Preheat oven to 375°F.
2. Unroll the dough and separate it into 8 breadsticks. Cut each one crosswise into thirds to make 24 pieces. Flatten each until it is 1 or 1½ inches wide. (Alternatively, roll out the pizza dough and cut it into 8 strips, then crosswise into thirds.)
3. Place a piece of pepperoni and a square of cheese in the middle of each piece of dough and fold over the ends to enclose them, pressing the edges to seal. Place seam side down on a baking sheet.
4. Sprinkle the bundles with Italian seasoning and Parmesan cheese.
5. Bake for 15-20 minutes, until golden. Serve immediately. Warm the spaghetti sauce and serve alongside for dipping.
